The aim of this study of the shad Vi/osa sp.) is to determine the flesh's characteristics in relation with fishing are as and catching periods as weIl as the best storage conditions of the fresh and frozen fish, in order to predict the resulting changes with the eventual aim of increasing the market consumption. Chemical, bacteriological and sensorial analysis have been assessed in order to follow the change in the product during the storage. The frozen fish will be analysed until July 1992. Some tests to rem ove bones, using a machine designed for carp fillets, have been done with the aim of adjusting the process to the shad. At the end of the study we have given advice to the fishermen concerning the conditions necessary to keep the fish fresh and we have outlined in a table a scale of freshness for the shad. The conclusions on the effects of freezing are not exhaustive. We should wait until the end of the study to give an objective judgment on the treatment. The tests to remove bones could be continued on fresh fish, with some adjustments.. Cette étude sur l'Alose a été menée dans le but de déterminer les caractéristiques de la chair en fonction des lieux de pêche et de la période de capture, ainsi que les conditions de conservation du poisson à l'état congelé, pour envisager d'éventuelles transformations. Des analyses chimiques, bactériologiques et sensorielles ont été utilisées pour suivre l'évolution du produit au cours de l'entreposage. Les poissons congelés seront suivis jusqu'en Juillet 1992. Des essais de désarêtage, à l'aide d'une machine traitant actuellement des filets de carpe, ont été faits dans l'optique de la mise au point d'un procédé adapté à l'Alose. Au terme de l'étude, nous avons pu donner des conseils aux pêcheurs concernant les conditions de conservation des poissons frais, et nous avons ébauché un tableau de cotation de fraîcheur spécifique à l'Alose. Les conclusions sur les effets de la congélation ne sont que partiels, il faut attendre la suite de l'étude pour donner un avis objectif sur le traitement. Les essais de désarêtage pourraient être poursuivis sur du poisson frais, moyennant quelques adaptations.
